Italian Potato Salad with fish

The Italian approach to Potato Salad usually includes green beans and tomato. On Italian written web pages I also find many recipes including fish.

Use garden grown fingerling shaped potato to take advantage of cooking the tubers whole and with the skin. Boil potato with the skins for about 20 minutes to preserve most of the nutritional value.

Cut the tubers in chunks or slices, add fresh tomato and steamed green beans, wisk in 1/2 cup of olive oil. For additional flavor add capers and olives, plus fresh chopped parsley. Red vinegar, salt and pepper to taste.

A great addition could be a small can of thuna fish. Or any other cooked fish leftovers, including shrimp.
